Roasted Plum, Burrata & Cucumber Salad

An elegant summer salad of roasted plums, burrata, cucumber, mint, and crunchy pistachios.

This salad brings together roasted plums and peaches, cucumber, burrata, pistachios, almonds, honey, and mint — a combination that feels both elegant and fresh. Sweet, jammy plums contrast beautifully with creamy burrata, while ribbons of cucumber add freshness and balance.

As plum season approaches, this is a recipe worth bookmarking. Be sure to save the juices from the roasted fruit and spoon them over the salad with a little olive oil—they become part dressing, part sauce, and bring all of the flavours together beautifully.

Colourful, seasonal, and full of texture, it's a salad that is just as beautiful to look at as it is to eat.


Serves 2–4

Ingredients

  • 2–3 plums, halved and sliced

  • 1–2 peaches, sliced

  • 3 small cucumbers, grated or shaved into ribbons

  • 1 ball of burrata

  • 1 tbsp pistachios, roughly chopped

  • 1 tbsp almonds, roughly chopped

  • A small handful of fresh mint, finely chopped

  • 1–2 tbsp olive oil

  • 1 tsp honey

  • Sea salt and black pepper, to taste

Method

  1. I cooked the fruit in the air fryer at 180°C for around 5 minutes until softened and lightly caramelised. Alternatively, roast the plums and peaches in the oven at 180°C (160°C fan) for 15–20 minutes until soft and juicy.

  2. Arrange the cucumber on a serving plate and season lightly with sea salt and black pepper.

  3. Spoon the warm fruit over the cucumber, reserving any juices released during cooking.

  4. Tear the burrata over the top and scatter with the chopped pistachios, almonds, and fresh mint.

  5. Drizzle over the reserved fruit juices, a little extra olive oil, and the honey.

  6. Serve immediately and enjoy.

Notes

Don't be tempted to discard the juices from the roasted fruit. Combined with a little olive oil, they create a simple dressing that ties the whole salad together beautifully.

This is also a wonderfully adaptable recipe. Nectarines work beautifully in place of peaches, and you can swap the pistachios and almonds for whatever nuts you have to hand.
